With The Black Prince Rides scenario yes, it is unfortunate but it tends to end fairly quickly. You can try playing it so players on the same side have to achieve both of their objectives to win. This makes it more of a cooperative 2 vs 2 than it currently is.
With regards to your game, none of the victory conditions trigger immediately so you would only check for victory during the Camp Phase after the Casualties check. If the French were still in control of the wagon at the end of the round, it sounds like a draw. See the last paragraph of the scenario victory conditions.
1) Yes the sword icon indicates it is an attack bonus. There other special rule means when defending they gain the Retaliation skill
2) You can elect not to ring the bell. If you do ring the bell however, all Peasants move.
3) The Guide has a white dice defence. Peasants and the Bonesetter have no defence.
